One of the most satisfactory explanation states that the growth inhibitor genes lies in the female lion and male tiger's DNA, so, when you mate a male lion with a female tiger, the off spring produced will have no growth inhibitor gene.

Since they couldn't hunt any animals, ligers could only survive in captivity.
